Broiled Grapefruit w/ Coconut Sugar

In Blacksburg, VA one of my favorite breakfast spots is a vegetarian restaurant called Gillie’s. On the menu is a broiled grapefruit that is AMAZING! I decided to recreate this at home to mix up my breakfast routine. The coconut sugar gave it a rich color with a  hint of molasses flavor. It was so delicious and was the perfect side to my scrambled eggs!

This is an amazing breakfast on a cold Fall morning, so give it a try!

Grapefruit

INGREDIENTS:

1 Organic Ruby Red Grapefruit

1 tsp. Coconut Sugar

Pre-heat Broiler. Slice the grapefruit in half and sprinkle with coconut sugar. Place on a roasting pan and broil on the top rack until the coconut sugar is bubbly. This will only take a few minutes, so watch it carefully.
